It’s hot in London, and my body needs something light and refreshing. This zesty salad is ready in no time, very light and refreshing.
Radishes are rich in vitamin C and also provide a host of phytonutrients that seem to bring a range of health benefits, most notably to help our body main detoxifying organ, the liver.
Cucumber is rich in potassium which make it great for this hot weather.
- half a cucumber
- 7-8 radishes
- a sprinkle of extra-virgin olive oil
- a dash of lemon juice
- a dash of wholegrain mustard
- a little of sea salt to taste
Finely slice the radishes and cucumber, put them in little bowl and the seasoning. Make sure you add just a tiny bit of olive oil, as you don’t want to overpower the ingredients of this salad. Mix and then place in a serving plate.
