Four tomatoes salads for the summer

Tomatoes are the kings of the summer. Technically a fruit a rather than a vegetable they comes in a myriad of different variety, but all have in common a great taste and a plentitude of nutrients and health benefits. Rich in vitamin C, anti-oxidants, potassium and phyto-nutrients, tomatoes are easy to get and great to mix with a huge number of salads.

Here are some simple ideas, for when you need inspiration and not too many ingredients too choose from.

 

  1. Tomatoes, red onions & thyme salad

I would suggest to use larger tomatoes, to slice up thinly together with the onions. Thyme needs to be fresh, ( it easy to keep in a pot in your kitchen) and generously sprinkle with good quality extra-virgin olive oil ( I can recommend Greek Iliada). Sea salt to taste.

     2.Tomatoes, oregano & capers salad

Another easy way to spice up your simple tomatoes salad. Capers keep for long in a jar, and dried oregano is perfect for this salad. As above good quality olive oil is the key.

     3.Tomatoes, cucumber, black olives and sumac salad

Sumac is Middle Eastern spice that I recently discovered, and soon fell in love with. Slightly spicy with fresh tangy taste is perfect to liven up any salad.

   4. Tomatoes & avocado salad

Avocados and tomatoes are a match made in heaven. The avocado brings even more healthy benefits, with its healthy fats and various nutrients, keeping you full for longer. Sprinkle a bit of olive oil and you are done!
